Recipe of the Week - Chinese Chicken salad


Here is what you need for the salad:
  • shredded cold chicken (roasted, baked, etc)
  • sliced green leaf lettuce
  • grape tomatoes
  • cubed cucumbers
  • beans sprouts
  • water chestnuts
  • chopped cilantro
  • sliced green onions
  • Rice sticks- rice noodles


For the dressing:
  • 1/2 tsp dry mustard
  • 2 tbsp sugar
  • 2 tsp soy sauce
  • 1 tbsp sesame oil
  • 1/4 cup vegetable oil
  • 3 tbsp rice vinegar


Combine all the ingredients, mix well and set aside. Normally I make a double batch of dressing if I am serving more than 4 people.





Combine all the salad ingredients in a bowl




Separate all the noodles. Heat oil in a frying pan until very hot. Drop noodles into oil and they will puff up in a couple of seconds. Immediately remove from oil and set aside.

 The noodles are so much fun to make!






Liberally apply dressing to the salad. Serve with noodles on top.
